ベジタリアンとは
海外事情
インドではゾロアスター教、ヒンズー教（の厳格派）、仏教、ジャイナ教などという宗教の影響により、不殺生や肉食忌避、また菜食によって徳を積むという観念が基になっています。高位カースト（バラモン）階級の人々はベジタリアンですが、全インドでは6割がベジタリアンです。
特に、ヒンドゥー教徒やジャイナ教徒の多い南インド・西インドのかなりの割合の人々はベジタリアンです。これは、穀物、豆、牛乳で栄養を賄うことのできる自然環境であったことも大きな要因の一つです。一方、植民地色の名残の強い地域や観光客の多い地域、および北西のイスラム文化圏や海岸地域では羊肉や魚をよく食べます。
欧州ではベジタリアニズムの流れも古くから存在していました。
ピタゴラスはベジタリアンの祖といわれています。AD3～6世紀のローマ帝国では新プラトン主義によりベジタリアニズムが普及しました。
1847年にはキリスト教団体｢バイブル使徒教会｣が｢イギリスベジタリアン協会｣を発足させました。1880年までにイギリスではベジタリアンレストランはポピュラーなものになりました。

近年、食肉中の残留薬剤への不安、狂牛病・口蹄疫の流行などによりさらにベジタリアンが増加しました。ベジタリアン人口はイギリスが最も多く、2000年の調査では国民の9％を占めています。スウェーデンでは人口の6%、ドイツでは660万人、オランダ4.4% 、イタリアでは250万人と推定されています。
